Moist Chocolate Cake

  1. Place the butter, oats and cocoa in a mixing bowl; add boiling water and stir until butter is melted.
  2. Add brown sugar and vanilla; mix well.
  3. Add eggs, one at a time, beating well after each addition.
  4. Combine the flour, baking powder, baking soda and salt; add to oat mixture just until combined.
  5. Pour into a greased 13 x 9 x 2-inch baking pan.
  6. Bake at 375u0b0 for 30 to 35 minutes or until a toothpick inserted near the center comes out clean.
  7. Cool completely on a wire rack.
  8. Frost with chocolate frosting.
  9. Yield: 12 to 16 servings.
