Grilled Red Snapper With Spicy Lime Soy Sauce
- 3 tablespoons lime juice
- 1/2 cup soy sauce
- 1 tablespoon oyster sauce
- 2 tablespoons brown sugar
- 1 teaspoon garlic and red chile paste
- 2 teaspoons fresh ginger, minced
- 2 tablespoons scallions, chopped
- 2 tablespoons peanut oil
- 4 red snapper fillets (scaled, skin on, about 6 ounces each)
- cilantro (to garnish)
- lime wedge (to garnish)
- Combine lime juice, soy sauce, oyster sauce, sugar, chili garlic paste, ginger, scallions and peanut oil in a large bowl.
- Add fish and marinate for 2 hours, turning occasionally.
- Preheat grill to medium-high.
- Grill fish 4-10 minutes, depending on thickness.
- Garnish with cilantro and lime wedges.
