Spinach Lasagna
- 2 cups small-curd cottage cheese
- 1 1/2 cup shredded Mozzarella cheese, divided
- 1 egg
- 1 (10-oz) pkg frozen chopped spinach, thawed and drained
- 1 tsp. salt
- 1 tsp. whole oregano, crushed
- 2 (15-oz) jars spaghetti sauce (Prego mushroom is good)
- 1 (8-oz) pkg. lasagne noodles, uncooked
- 1 cup water
- Combine cottage cheese, 1 cup mozzarella cheese, egg, spinach, salt and oregano in a large mixing bowl; stir well. Spread 1/2 cup spaghetti sauce in a greased 9 X 13 inch baking dish.
- Place 1/3 of the lasagne noodles over sauce and spread with half of the cheese mixture.
- Repeat layers.
- Top with remaining noodles, spaghetti sauce and 1/2 cup mozzarella cheese.
- Pour water around edges.
- Cover securely with aluminum foil and bake at 350 degrees for 1
- 1/4 hours.
- Let stand 15 minutes before serving.
