Mama King'S Easy Fritata
- 8 eggs
- 1/2 cup milk
- 1/4 teaspoon cayenne
- 1/4 teaspoon salt (or more to taste)
- 1/4 teaspoon black pepper (or more to taste)
- 1 1/2 cups lean ham, diced
- 1/4 cup bacon bits
- 1 1/2 - 2 cups Baby Spinach
- 2 tomatoes, thickly sliced
- 3 green onions, sliced
- 1 cup colby-monterey jack cheese, shredded, divided
- Preheat oven to 375*.
- Butter 2 9X9 baking pans (glass works great).
- Break eggs into mixing bowl. Add milk, salt, pepper, and cayenne. Mix well.
- Layer bacon bits, ham and vegetables in order listed in baking pans.
- Sprinkle 1/4 Cup cheese over each.
- Divide egg mixture evenly between both pans.
- Bake at 375* 35 minutes, or until eggs are cooked.
- Remove from oven and top with remaining cheese.
- Slice each fritata into 6 pieces. Serve with green salad, fruit, and sauteed squash.
