Cheesy Ham Loaf
- 6 slices bacon, diced
- 6 eggs
- 3/4 cup milk
- 1/2 cup all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup cubed monterey jack cheese (1/2 inch) or 1 cup cubed swiss cheese
- 1 cup cubed mild cheddar cheese (1/2 inch)
- 1 cup cubed cooked ham
- Brown bacon over medium heat until light golden brown. Drain.
- In large mixing bowl, beat eggs uintil foamy.
- Add milk, flour, baking powder and salt. Beat until smooth.
- Stir in remaining ingredients and bacon; blend well.
- Pour into greased and floured 9X5-inch loaf pan.
- Bake at 350 for 50 to 60 minutes until golden brown.
- Remove from pan. serve hot, cut in slices.
- tips: if desired, add 1 teaspoon prepared mustard.
- recipe can be doubled and baked in 2 9X5 loaf pans.
- I have sometimes added a chopped onion which I had cooked in the bacon grease.
