13 Bean Soup(Serves 8)
- 2 c. mixed beans (13 different types)
- water
- 2 Tbsp. salt
- 2 qt. fresh water
- ham or ham hock
- 1 large onion, chopped
- 1 (16 oz.) can tomatoes, chopped
- 1 of the following three: 1 pod red pepper, 1 tsp. chili powder or 1 small can green chopped chilies
- juice of 1 lemon
- salt and pepper to taste
- Rinse and sort beans before cooking.
- Cover beans with water. Add 2 tablespoons salt.
- Soak overnight and drain.
- Add 2 quarts fresh water and ham or ham hock.
- Bring to a boil, simmer 3 hours. Add onion and tomatoes.
- Add one of the following three: pod of red pepper, chili powder or green chopped chilies.
- Add juice of lemon.
- Salt and pepper to taste.
- Simmer another 30 minutes or 1 hour.
- Flavor improves with age.
