13 Bean Soup(Serves 8)

  1. Rinse and sort beans before cooking.
  2. Cover beans with water. Add 2 tablespoons salt.
  3. Soak overnight and drain.
  4. Add 2 quarts fresh water and ham or ham hock.
  5. Bring to a boil, simmer 3 hours. Add onion and tomatoes.
  6. Add one of the following three: pod of red pepper, chili powder or green chopped chilies.
  7. Add juice of lemon.
  8. Salt and pepper to taste.
  9. Simmer another 30 minutes or 1 hour.
  10. Flavor improves with age.
