Ful Medames(Lebanese; International)
- 16 oz. beans (fava, red kidney or black-eyed; choose your favorite!)
- 2 cloves garlic, crushed
- 4 Tbsp. olive oil
- 1 1/2 Tbsp. lemon juice
- 2 tsp. finely chopped parsley
- salt and pepper
- fresh mint leaves
- 1/4 c. diced radish
- 1/4 c. diced tomato
- 1/4 c. finely chopped green onion
- 4 c. watermelon flesh, peeled, seeded and diced small
- 1/3 c. minced red onion
- 1/3 c. minced cilantro
- 1 Tbsp. minced fresh jalapeno chile
- 1 Tbsp. minced fresh red jalapeno chile or other mild fresh pepper
- 1/2 tsp. kosher salt
- 2 garlic cloves, minced
- 2 Tbsp. fresh lime juice
- Toss together watermelon, onion, cilantro, jalapeno chiles, salt, garlic and lime juice in glass or pottery bowl. Let stand at room temperature 30 minutes, then serve immediately. Makes 4 to 6 servings.
