Homemade Vanilla Cream Pie
- 3/4 c. sugar
- 1/3 c. all-purpose flour or 3 Tbsp. cornstarch
- 1/4 tsp. salt
- 2 c. milk
- 3 slightly beaten egg yolks
- 2 Tbsp. butter or margarine
- 1 tsp. vanilla
- 1 1/2 c. flaked coconut
- 1 (9-inch) baked pastry shell
- Combine sugar, flour and salt in saucepan.
- Gradually stir in milk and cook over medium heat until bubbly, stirring constantly. Cook and stir 2 minutes and then remove from heat.
- Stir small amount hot mixture into egg yolks and return to saucepan. Continue to cook and stir 2 minutes.
- Remove from heat; add butter and vanilla.
- Sprinkle flaked coconut over bottom of pastry shell. Add 1 cup of coconut to cooked mixture and pour into cooled pastry shell.
- Spread meringue atop pie.
- Top with remaining coconut (approximately 1/3 cup) and bake at 350u0b0 for 12 to 15 minutes.
- Cool and serve.
- You may substitute whipped topping for meringue but do not bake.
