Chocolate Cheese Cake
- 1 1/2 c. ground pecans
- 1/4 c. sugar
- 2 Tbsp. margarine, softened
- 3 egg whites
- 1/4 c. sugar
- 1 (8 oz.) pkg. cream cheese, softened
- 1 (6 oz.) pkg. chocolate chips, melted
- 3 egg yolks
- 1/4 c. sugar
- 1 tsp. vanilla
- 1 c. evaporated milk, partially frozen
- 1 c. broken pecans
- Mix first 3 ingredients and pat onto bottom of 10-inch spring-form tube pan and bake 8 minutes at 375u0b0.
- Cool.
- Beat until stiff and set aside the egg whites and 1/4 cup sugar.
- Beat cream cheese, chocolate chips, egg yolks, sugar and vanilla together.
- Whip evaporated milk until stiff.
- Fold in whipped milk, beaten egg whites and broken pecans.
- Pour into nut-lined pan and freeze overnight.
- Let set at room temperature a few minutes before cutting.
