Sausage Zucchini Boats

  1. Cook whole zucchini in salted boiling water until tender, 7 to 10 minutes.
  2. Cut in 1/2 lengthwise segments.
  3. Scoop squash from shells and mash.
  4. Cook sausage with onion.
  5. Drain off excess fat. Stir in mashed zucchini, reserving 2 tablespoons Parmesan cheese. Add remaining ingredients.
  6. Mix with a spoon into shells.
  7. Place shells in a shallow baking dish.
  8. Sprinkle with remainder of Parmesan cheese and dash of paprika.
  9. Bake in moderate oven at 350u0b0 for 25 to 30 minutes.
