Sausage Zucchini Boats
- 4 medium zucchini
- 1 lb. pork sausage
- 1/4 c. chopped onion
- 1/2 c. fine cracker crumbs
- 1 slightly beaten egg
- 1/2 c. grated Parmesan cheese
- 1/4 tsp. salt
- 1/4 tsp. thyme
- dash of garlic powder
- dash of black pepper
- Cook whole zucchini in salted boiling water until tender, 7 to 10 minutes.
- Cut in 1/2 lengthwise segments.
- Scoop squash from shells and mash.
- Cook sausage with onion.
- Drain off excess fat. Stir in mashed zucchini, reserving 2 tablespoons Parmesan cheese. Add remaining ingredients.
- Mix with a spoon into shells.
- Place shells in a shallow baking dish.
- Sprinkle with remainder of Parmesan cheese and dash of paprika.
- Bake in moderate oven at 350u0b0 for 25 to 30 minutes.
