Fruit Cocktail Cake
- 1 1/2 c. sugar
- 2 c. sifted flour
- 1/2 tsp. salt
- 2 tsp. baking soda
- 2 eggs, slightly beaten
- 1 can fruit cocktail
- 1/4 c. brown sugar
- 1/2 c. chopped walnuts
- 1 stick margarine
- 3/4 c. white sugar
- 3/4 c. canned milk
- 1/2 c. chopped walnuts
- 1 c. firmly packed Angel Flake coconut
- 1/2 tsp. vanilla
- Mix first six ingredients together until well mixed.
- Pour into greased and floured 9 x 13-inch pan.
- Mix together brown sugar and 1/2 cup chopped walnuts.
- Sprinkle over cake batter and bake at 350u0b0 for 45 minutes.
- Just before cake is ready to come out of the oven, in a small pan mix the margarine, white sugar and canned milk.
- Boil for 2 minutes, remove from heat and add 1/2 cup chopped walnuts, coconut and vanilla.
- Spread this mixture over cake as soon as cake comes out of the oven.
