Baked Stuffed Mushrooms
- small box Ritz crackers (3 waxed rolls), crushed
- 1/3 c. olive oil
- 2 to 3 pkg. large stuffing mushrooms
- 2 medium onions, chopped fine
- 1 can crabmeat, chopped
- 1/4 c. margarine
- 1/4 c. water
- juice of 1/2 lemon
- 1 Tbsp. sherry or white wine, if desired
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 2 cloves chopped garlic
- 1 lemon, cut into wedges
- Wash mushrooms and set aside on paper towel to dry.
- Remove stems from mushrooms and then chop stems into small pieces.
- Saute onions, chopped mushroom stems and garlic in olive oil until onions are tender (glassy looking).
- Pour cooked mixture into large bowl.
- Add Ritz crackers, crabmeat, water, lemon juice, sherry if desired, salt and pepper.
- Mix all together.
- Stuffing should be consistency that will stay together when stuffed into mushrooms.
- If not, add water and oil in equal amounts to get desired consistency.
- Stuff mushrooms.
- Place in baking dish. Cook in 350u0b0 oven for 20 to 30 minutes until browned on top.
- Serve with lemon.
