Lithuania Kugelis
- 3 to 4 large red potatoes
- 1 small container sour cream
- 1 lb. regular bacon
- 1/2 yellow onion
- 1 small can evaporated milk
- 4 large eggs
- garlic powder
- salt and pepper
- sweet basil
- 1/2 stick butter
- Place 1/2 stick of butter in frying pan.
- Cut up bacon and onion into small pieces.
- Cook in butter until translucent.
- Peel and cut 1 potato into small pieces; set aside.
- Peel and cut remaining potatoes.
- Place in large mixing bowl.
- In blender, crack eggs, turn on and off one time quickly.
- Add the 1 potato that was set aside and turn on and off quickly.
- To blender, add salt and pepper and garlic powder to taste, then more potatoes, salt, pepper and garlic powder until all potatoes are in the blender.
- Add evaporated milk, turn blender to number 2 setting; blend until potatoes are coarse.
- Pour blended potatoes into big mixing bowl. Add the bacon and onions and mix well.
- In buttered glass dish, pour mixture and sprinkle basil on top.
- Bake at 325u0b0 for 1 hour. Cool, cut into squares and serve with sour cream.
