Lentil Soup With Frankfurters
- 2 large onions
- 1 stalk celery, diced
- 1 leek, sliced
- 1 medium potato, peeled and cubed
- 3 slices bacon, diced
- 1 Tbsp. butter
- 1 c. lentils
- 1 carrot, diced
- 4 frankfurters, thickly sliced
- salt to taste
- 1 Tbsp. catsup
- 3 qt. water or chicken broth
- Place onions, celery, leek, potatoes, diced bacon and butter in a heavy kettle.
- Saute until soft, but not brown.
- Wash and drain lentils.
- Add them to potatoes with carrots, sliced franks, salt, catsup and water or chicken broth.
- Bring to a boil, lower heat and simmer, covered, for 3 hours or until lentils are soft. Add more water as needed.
- Recipe can be prepared in crock-pot or slow cooker according to manufacturer's directions.
- Serves 8.
