Maryland Crab Soup
- 6 to 8 strips bacon
- 1 lb. beef shin bone
- 3 qt. water
- 1 large onion, chopped
- 2 large stalks celery, chopped
- 1 (l lb.) can tomatoes
- 1 Tbsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. cayenne pepper
- 1 (10 oz.) pkg. frozen mixed vegetables
- 1 pkg. frozen mixed soup vegetables with okra
- 1 lb. crab meat or 6 to 8 cooked and steamed crabs (pick center part and throw in claws)
- Brown beef in soup pot with bacon strips.
- Add other ingredients, except frozen vegetables and crab meat.
- Cook 3 hours or until meat is tender.
- Add rest of ingredients and simmer covered until vegetables are done.
- If you want it hotter, add a few dashes of Tabasco sauce, or have it available on serving.
