Croatian Tripe
- 3 tablespoons sunflower oil
- 1 onions, chopped or 250 g onions
- 4 garlic cloves, chopped
- 100 g carrots, chopped
- 100 g celery root, chopped
- 80 g fresh bell peppers, chopped
- 150 g bacon, cut into small pieces
- 500 g precooked tripe
- 1 tablespoon ground sweet red paprika
- 1 1/2 tablespoons tomato puree
- 1 bay leaf
- 800 ml beef broth, from 1 cube
- 1/3 cup parmesan cheese, grated
- In a large saucepan, heat the sunflower oil. Add the onion, garlic, celery root, carrot, bell pepper and pancetta and saute for 3 minutes or until they are soft.
- Add the tripe, sweet red paprika, tomato puree and bay leaf, stir.
- Add the beef broth, cover the pan and bring to the boil. Lower the flame and cook over low heat for 20 minutes.
- Serve sprinkled with grated Parmesan cheese.
