Baked Spiced Fruit
- 1 (17 oz.) can apricot halves
- 1 (16 oz.) can peach halves
- 1 (16 oz.) can pear halves
- 1 (15 oz.) can pineapple chunks
- 1 c. orange juice
- 1/3 c. firmly packed brown sugar
- 1 Tbsp. lemon juice
- 1 (3-inch) stick cinnamon
- 4 whole cloves
- 1/8 tsp. mace
- dash of salt
- Drain fruit, reserving syrup for other uses.
- Cut apricot, peach and pear halves in half.
- Combine fruit in a 12 x 8 x 2-inch baking dish.
- Combine orange juice and remaining ingredients in a saucepan.
- Bring to a boil.
- Reduce heat and simmer 2 minutes. Pour over fruit.
- Bake at 350u0b0 for 30 minutes.
- Cool. Cover and chill for 8 hours.
- Remove cinnamon stick and whole cloves before serving.
- May be served hot or cold.
