Barley, Corn, Red Pepper And Green Onion Pilaf

  1. Heat oil in heavy medium saucepan over medium-high heat.
  2. Add chopped bell pepper and half of the green onions; saute until tender, about 5 minutes. Add barley and stir to coat with olive oil. Add barley and stir to coat with olive oil.
  3. Add broth and bring to a boil, stirring occasionally, for about 40 minutes. Add corn and stir until heated through, about 5 minutes.
  4. Mix in sliced basil and remaining green onions. Season to taste with salt and pepper; serve.
  5. A great dish to serve with fish or poultry. Makes 6 servings.
