Wild Duck

  1. Season the inside of the cavity of the dressed duck with salt and pepper.
  2. Fill the cavity with a mixture of celery, onions, apples and potatoes, seasoned with salt and pepper.
  3. (This helps absorb some of the wild game flavor.)
  4. Rub the outside surface of the duck with a cut onion and bacon fat.
  5. Place on a rack with breast down in a roaster with tight fitting lid.
  6. Cook for one hour at 300u0b0.
  7. After the first hour, turn the bird with breast up and cook until tender.
  8. Remove the cooked vegetables from the cavity (I discard these, they are too strong in flavor).
  9. Stuff the bird with one of the following:
  10. a highly seasoned bread dressing, cooked wild rice or sauerkraut.
  11. Brush the outside surface of the duck with butter and put into shallow pan.
  12. Return to oven at 350u0b0 to brown.
