Wild Rice-Apple Stuffing
- 1 Tbsp. margarine
- vegetable cooking spray
- 1/2 c. finely chopped onion
- 1 c. finely chopped unpeeled Granny Smith apples
- 2 c. cooked wild rice (cooked without salt or fat)
- 3/4 c. low sodium chicken broth
- 1/4 c. unsweetened apple juice
- 1/4 c. raisins
- 1/2 tsp. salt
- 1/2 tsp. rubbed sage
- 1/2 tsp. dried whole thyme
- 1/8 tsp. ground nutmeg
- 6 (3/4 oz.) slices cracked wheat bread, cut into 1/2-inch cubes
- Melt margarine over medium heat in a large skillet coated with cooking spray.
- Add celery and onion; saute 3 minutes.
- Add apple; saute 5 minutes or until apple is tender.
- Combine apple mixture, rice and remaining ingredients in a 2-quart casserole; stir well.
- Cover and bake at 350u0b0 for 40 minutes.
- Uncover and bake 5 minutes.
- Yield:
- 6 servings.
