Spanakopita(Greek Spinach Pie)

  1. Mix spinach, onion, eggs, crumbs, parsley, oil and cheeses in large bowl.
  2. Melt butter.
  3. Grease a 9 x 13-inch pan; dust with some bread crumbs.
  4. Unroll phyllo and lay out 1 sheet into pan. Brush with melted butter.
  5. Keep remaining phyllo covered with damp cloth.
  6. Continue with 5 more sheets, brushing each with butter. Place mixture into pan; smooth top.
  7. Arrange 6 more buttered sheets, one at a time.
  8. Using razor blade, cut squares through top layers only.
  9. Bake at 375u0b0 for 1 hour.
  10. Finish cutting squares through to bottom layers.
