Cornbread Ring(Microwave)
- 1 c. yellow cornbread
- 1 c. unsifted all-purpose flour
- 2 Tbsp. sugar
- 4 tsp. baking powder
- 1/2 tsp. salt
- 1 egg
- 1 c. milk
- 1/2 c. cooking oil
- 1 can finely crushed French fried onions (3 oz.)
- 2 Tbsp. Parmesan cheese
- In large mixing bowl, stir together cornmeal, flour, sugar, baking powder and salt.
- Add egg, milk and cooking oil.
- Beat until smooth, about 1 minute.
- Place onions and cheese in well-greased 8-inch ring mold.
- Tilt to coat all sides, reserving excess crumbs.
- Pour batter into ring mold and sprinkle with reserved crumbs.
- Microwave at Medium-high (7) for 9 to 11 minutes, until toothpick inserted in center comes out clean.
- Turn out on cooling rack or serving plate.
- Serve warm.
