Vegetarian Couscous Paella

  1. Place oil in large skillet or dutch oven at medium-high heat.
  2. Add onion and garlic.
  3. Cook until onion is tender, about 5 minutes.
  4. Add broth, peas, carrots, salt, turmeric and red pepper.
  5. Bring to a boil over high heat.
  6. Reduce heat, cover and simmer 10 minutes.
  7. Remove from heat and stir in uncooked couscous, tomato, parsley and almonds.
  8. Cover and let stand 5 minutes before serving.
