Sweet Potato Pie
- 4 eggs
- 2 c. cooked sweet potatoes or yams, mashed, sieved, blended or processed
- 1 c. brown sugar
- 1/2 tsp. salt
- 1/2 tsp. ginger
- 1/2 tsp. cinnamon
- 1/8 tsp. ground cloves
- 1/2 tsp. nutmeg
- 1/2 tsp. pure vanilla extract
- 1 3/4 c. half and half or evaporated milk
- unbaked pastry shell for 9-inch pie
- Preheat oven to 450u0b0.
- Break eggs in bowl and whip until combined.
- Add potatoes, sugar, salt and spices.
- Blend well.
- Add half and half, then stir well.
- Ladle this filling into the pastry shell.
- Bake for 15 minutes at 450u0b0, then reduce heat to 300u0b0 and bake approximately 30 minutes longer or until a toothpick inserted 1 inch from the pie's center comes out clean.
- Remove pie from oven and cool on rack.
