Sweet Potato Pie

  1. Preheat oven to 450u0b0.
  2. Break eggs in bowl and whip until combined.
  3. Add potatoes, sugar, salt and spices.
  4. Blend well.
  5. Add half and half, then stir well.
  6. Ladle this filling into the pastry shell.
  7. Bake for 15 minutes at 450u0b0, then reduce heat to 300u0b0 and bake approximately 30 minutes longer or until a toothpick inserted 1 inch from the pie's center comes out clean.
  8. Remove pie from oven and cool on rack.
