Fluffy Key Lime Pie

  1. Combine pie filling mix, 1 cup of sugar and 1/4 cup of water in saucepan.
  2. Blend in egg yolks; add remaining water.
  3. Cook and stir over medium heat until mixture comes to a full boil.
  4. Remove from heat; stir in lime juice and rind.
  5. Beat egg white until foamy throughout.
  6. Gradually add 1/4 cup sugar and continue beating until mixture will form stiff, shiny peaks.
  7. Blend in pie filling mixture.
  8. Add enough food coloring to tint light green. pour onto crust.
  9. Chill until firm.
  10. Garnish with prepared whipped topping, lime slices or twists.
