The Christ Child'S Birthday Cake
- 3 1/3 c. flour, sifted
- 1 tsp. soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. allspice
- 1 tsp. nutmeg
- 1 tsp. cloves
- 1 c. shortening
- 1 2/3 c. white sugar
- 4 eggs
- 1 c. black walnuts
- 1 c. buttermilk
- 1 c. seedless blackberry jam
- Sift first 7 ingredients together twice and set aside.
- Cream in a large bowl the shortening and white sugar.
- Add eggs to sugar mixture.
- Sprinkle a small amount of dry ingredients over nuts. (This helps spread nuts more evenly through mixture.)
- Add alternately the dry ingredients and buttermilk to sugar mixture; blend thoroughly.
- Stir in jam and add black walnuts; mix well. Grease a 10-inch angel food pan.
- Line pan with waxed paper, then grease waxed paper.
- Pour batter into pan.
- Bake in preheated 350u0b0 oven for 1 1/2 hours.
- Cool thoroughly before icing.
