Apple-Carrot Bake

  1. Combine carrots and 1/2 cup water in saucepan.
  2. Bring to a boil; cover, reduce heat and simmer 5 minutes or until crisp-tender.
  3. Drain carrots and set aside.
  4. Combine sugar and flour; set aside.
  5. Layer half each of carrots and apples in a lightly greased, shallow 2-quart baking dish; sprinkle with half of flour mixture and dot with 2 tablespoons butter.
  6. Repeat procedure.
  7. Drizzle with orange juice and ginger, mixed together. Bake at 350u0b0 for 45 minutes.
  8. Toss before serving.
  9. Yield:
  10. 8 servings.
