Black Bottom Cupcakes(40 Cookies)
- 2 c. chocolate wafer crumbs
- 2 Tbsp. melted butter
- 1/8 tsp. cinnamon
- 2 lb. cream cheese (four 8 oz. pkg.)
- 1 1/2 c. sugar
- 4 eggs
- 2 3/4 Tbsp. green creme de menthe
- 1/4 tsp. peppermint extract
- 1/4 tsp. salt
- 1/2 c. semi-sweet chocolate chips
- 1 c. whipping cream
- Preheat oven to 325u0b0.
- Grease and flour 9-inch spring-form pan. Combine chocolate crumbs, melted butter and cinnamon in large bowl. Press into bottom of prepared pan.
- Set aside.
- Combine cream cheese and sugar in large bowl with electric mixer and blend well. Add eggs and beat until smooth.
- Add creme de menthe, peppermint and salt.
- Beat again.
- Pour mixture into prepared crust.
- Add chocolate chips and stir very gently.
- Bake 45 minutes at 325u0b0. Turn off heat and let cake cool in oven with door closed 1 hour. Refrigerate cheese cake in pan until ready to serve.
- Top with whipped cream.
