South Seas Chicken
- 1/2 c. all purpose flour
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. paprika
- 1 2 1/2 to 3 lb. chicken, cut up
- 1/4 c. corn oil
- 1 8 oz. can whole onion, drained
- 1/2 c. chopped carrots
- 1 c. sliced celery
- 1 Tbsp. light brown sugar
- 1/4 tsp. ginger
- 1/2 6 oz. can frozen orange juice concentrate
- 3/4 c. water
- Combine flour, salt, pepper and paprika in paper bag.
- Add chicken, shake to coat.
- Reserve 2 Tbsp. flour mixture for gravy. Brown chicken in oil in skillet.
- Place chicken in 9x13-inch baking dish.
- Add onions, carrots and celery.
- Blend reserved flour mixture, brown sugar, and ginger into pan drippings; stir to make smooth paste.
- Add orange juice concentrate and 3/4 c water.
- Cook until bubbly.
- Pour over chicken.
- Bake covered at 350u0b0 for 1 1/2 hours.
- Makes 4 servings.
