South Seas Chicken

  1. Combine flour, salt, pepper and paprika in paper bag.
  2. Add chicken, shake to coat.
  3. Reserve 2 Tbsp. flour mixture for gravy. Brown chicken in oil in skillet.
  4. Place chicken in 9x13-inch baking dish.
  5. Add onions, carrots and celery.
  6. Blend reserved flour mixture, brown sugar, and ginger into pan drippings; stir to make smooth paste.
  7. Add orange juice concentrate and 3/4 c water.
  8. Cook until bubbly.
  9. Pour over chicken.
  10. Bake covered at 350u0b0 for 1 1/2 hours.
  11. Makes 4 servings.
