Baked Beans
- 1 lb. Great Northern beans
- 1 tsp. baking soda
- 1 small chopped onion
- 1 tsp. salt
- 1 hunk salt pork
- 2 tsp. spicy brown Goulden's mustard
- 1 c. white sugar
- paprika
- Soak
- beans
- overnight
- in cold water.
- In the morning, pick out bad ones.
- Drain beans.
- In a large pot, put new cold water and the beans.
- Bring to boil.
- Add 1 teaspoon of soda. Boil up to lip.
- Drain and rinse.
- Put new cold water (just to cover
- all), beans, chopped onion, salt and salt pork in pot. Bring
- to
- boil. Cover and simmer on medium.
- Add 2 teaspoons of mustard and 1 cup of white sugar.
- Stir.
- Pour into a large bowl.
- Stir
- and sprinkle
- with
- paprika.
- Bake at 400u0b0 until bubbly,
- 1
- to
- 5 minutes.
- Turn oven to 350u0b0.
- Bake for 1 1/2 hours
- until
- 1/4
- to 1/2-inch juice is left.
- Set on counter until thickens.
