Market Day Chuck Wagon Casserole
- 1 1/2 lb. Market Day meatballs
- 1 green pepper, chopped
- 1 tsp. salt
- 1 tsp. paprika
- 1 (16 oz.) can pork and beans
- 1 (15 oz.) can tomato sauce
- 1 medium onion, chopped
- 1 Tbsp. chili powder
- 1 (16 oz.) can lima beans, drained
- 10 (1/2-inch) cubes sharp cheese
- 1 can flaky refrigerator biscuits
- 1 c. celery, chopped
- Place meatballs, celery, green pepper, onion, tomato sauce and seasonings in a large heavy skillet.
- Simmer 20 minutes.
- Add beans and turn into a 2 1/2-quart casserole dish.
- Place a cube of cheese on each biscuit; fold biscuits in half.
- Firmly press edges to seal.
- Place on meatball mixture.
- Bake at 400u0b0 for 15 minutes or until biscuits are brown and done.
- Test with toothpick.
