Indian Fry Bread

  1. Dissolve yeast in warm water.
  2. Add sugar and salt.
  3. Allow to stand 5 minutes covered with towel.
  4. Add flour and oil; stir flour into liquid mixture.
  5. Turn out on floured board and knead until dough's texture is smooth.
  6. Put dough into greased bowl, cover, and let rise for 1 1/2 hours or until doubled in bulk. When doubled, punch down and knead a few moments in 1/2 c. cornmeal. Separate into two balls.
  7. Work with one ball at a time.
  8. Cover resting ball with towel.
  9. Roll dough into 12 inch diameter circle, 1/2 inch thick.
  10. Cut into 2 inch squares.
  11. Let pieces of dough rest while oil heats in iron skillet to boiling point.
  12. Fry 5 to 6 pieces at a time until golden brown, just a few moments.
  13. If there are leftovers, warm for breakfast and shake in confectioner's sugar.
