Shanghai Beef
- 1 1/2 pounds boneless round or sirloin steak, cut into strips or chunks
- 2 Tbsp. oil
- 2 Tbsp. cornstarch
- 1 1/2 c. beef broth
- 1 green pepper, cut into strips or chucks
- 1 red pepper, cut into strips or 1 can bean sprouts, do not drain
- 3 to 6 tbsp. soy sauce (depending on your taste)
- 1/2 tsp black pepper
- 1 1/2 c. minute rice
- Put oil in pan, add steak strips.
- Brown.
- When steak is fully browned, add cornstarch to pan.
- Mix until cornstarch has soaked up all juices.
- Add beef broth, green and red pepper strips, bean sprouts, soy sauce and pepper.
- Bring to a boil.
- When boiling, add minute rice.
- Remove from heat and cover pan.
- Let stand 5 minutes or until rice is fully cooked.
- Serve.
