Chicken Cacciatore
- 1/4 c. flour
- 1 tsp. salt
- 2 1/2 to 3 lb. fryer chicken, cut up
- 1/4 c. oil
- 1 green pepper, cut into strips
- 2 medium onions, quartered
- 1 (15 oz.) can tomato sauce
- 1/2 c. water
- 1 clove garlic, minced
- 1 tsp. salt
- 1 tsp. crushed oregano
- 1/4 tsp. pepper
- 1/4 tsp. thyme
- 1 small can mushrooms
- 3 c. hot cooked rice
- Mix flour and 1 teaspoon salt, coat chicken pieces with mixture.
- Brown chicken on both sides in hot oil, put chicken in roaster and add green pepper and onion.
- Mix tomato sauce, water, seasonings and mushrooms (with liquid).
- Pour over chicken. Cover.
- Place in oven for 1 1/2 to 2 hours at 375u0b0 or until chicken is done.
- Serve over cooked rice.
- Serves 4.
