Festive Bean Salad
- 2 cans (15 to 16 oz. each) Great Northern beans, rinsed and drained
- 1 can (15 oz.) black beans, rinsed and drained
- 2 c. peeled, seeded and chopped tomatoes
- 1 diced sweet red pepper
- 1 diced sweet yellow pepper
- 3/4 c. thinly sliced green onions
- 1/2 to 3/4 c. mild salsa
- 1/4 c. red wine vinegar
- 2 Tbsp. chopped fresh cilantro or fresh basil
- 1/8 to 1/4 tsp. freshly ground pepper
- Combine beans and tomatoes in a large bowl.
- Add peppers and sliced green onions.
- Stir gently to combine.
- Set aside.
- Combine salsa, vinegar, cilantro or basil and pepper in a small bowl. Stir with a wire whisk until well blended.
- Pour over bean mixture and toss gently.
- Chill 2 to 3 hours or overnight.
- Serves 10 to 12.
