Quick Hamburger And Potato Casserole
- 2 2/3 c. instant mashed potato flakes
- 1 1/2 c. sour cream (low-fat)
- 1/2 c. water
- 1 lb. ground beef
- 3 Tbsp. chopped onion or 1 Tbsp. dried minced onion
- 1 (15 oz.) can tomato sauce
- 1 (12 oz.) can corn with sweet peppers (if you can find it), undrained
- 1/2 c. water
- 1 tsp. salt
- 1/4 to 1/2 tsp. pepper
- 1/4 tsp. oregano
- 1/4 tsp. basil
- 1/2 c. diced American or Cheddar cheese
- In ungreased 9 x 13-inch baking dish, blend potato flakes with sour cream and 1/2 cup water.
- Mixture should be crumbly.
- If not, add more potato flakes.
- Pat firmly into bottom of pan.
- Brown beef (with onion if using fresh); add to meat the second 1/2 cup water and remaining ingredients, except cheese.
- Spoon beef mixture over potatoes.
- Sprinkle with cheese.
- Bake at 350u0b0 for 25 to 30 minutes.
- This recipe is easily doubled.
- Serves 6.
