Family Favorite Carrot Cake

  1. Cover raisins with boiling water; let stand 5 minutes.
  2. Drain. Combine flour, baking powder, cinnamon, baking soda and salt.
  3. In large bowl, beat sugar, shortening and eggs until fluffy.
  4. Add flour mixture and milk; beat on medium speed for 2 minutes.
  5. Stir in carrots, raisins and nuts.
  6. Spread into greased and floured 13 x 9-inch baking pan.
  7. Bake 35 minutes or until wooden pick comes out clean.
  8. Cool completely.
