Family Favorite Carrot Cake
- 1 c. raisins
- boiling water
- 2 1/3 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 2 c. lightly packed finely shredded carrots
- 3/4 c. milk
- 1 tsp. ground cinnamon
- 1 1/2 c. sugar
- 3/4 c. shortening
- 3 eggs
- 1/2 c. chopped walnuts
- Lemon Cream Cheese Frosting
- Cover raisins with boiling water; let stand 5 minutes.
- Drain. Combine flour, baking powder, cinnamon, baking soda and salt.
- In large bowl, beat sugar, shortening and eggs until fluffy.
- Add flour mixture and milk; beat on medium speed for 2 minutes.
- Stir in carrots, raisins and nuts.
- Spread into greased and floured 13 x 9-inch baking pan.
- Bake 35 minutes or until wooden pick comes out clean.
- Cool completely.
