Oklahoma Chili
- 2 lb. ground beef/chuck
- 1 c. diced bacon, fried unti crisp
- 1 1/2 c. chopped onion
- 1 1/2 c. chopped bell pepper
- 2 cans dark red kidney beans
- 3 cans pinto beans
- 1 small can green chilies
- 1/2 can beer (any type)
- 1 Tbsp. cumin
- 2 Tbsp. paprika
- 1 (28 oz.) can whole tomatoes
- 1 c. tomato catsup
- 2 c. water
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 1/2 Tbsp. chili powder
- 5 Tbsp. brown sugar
- 1 jalapeno or cayenne pepper (optional)
- Brown ground beef and add onion and pepper.
- Cook until onion is clear.
- Stir in cumin and paprika.
- Cook 5 more minutes.
- In large pot, combine rest of ingredients, except brown sugar.
- Add beef mixture.
- Bring to boil; turn down to simmer 1 hour, stirring occasionally.
- Add brown sugar and simmer 10 more minutes.
