Easy, Impressive Swedish Creme
- 2 cups heavy whipping cream
- 1 cup sugar
- 2 teaspoons sugar, for fruit
- 1 (1 tablespoon) envelope unflavored gelatin
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 2 cups sour cream
- 1 cup fresh raspberries, or or 1 cup strawberry, crushed or
- 1 cup frozen raspberries or 1 cup strawberry, crushed
- In a saucepan combine cream and 1 cup sugar.
- Cook and stir constantly, until candy thermometer reads 160 degrees,or.
- steam rises from pan. DO NOT BOIL.
- Gradually whisk in gelatin, stir until dissolved.
- Add both extracts, and blend.
- Cool for 10 minutes.
- Whisk in sour cream.
- Pour into 8 dessert glasses, or small bowls.
- Chill at least 1 hour.
- In the meantime, combine 2 tsp of the sugar with the fruit (if frozen, thaw first).
- Spoon equally over each serving.
