My Favorite Mushrooms
- 12 large mushrooms
- 3 Tbsp. olive oil
- 2 Tbsp. parsley leaves
- 1 scallion (green and white parts)
- 1 clove garlic
- 1/2 tsp. salt
- 1/4 tsp. pepper
- unflavored bread crumbs
- Clean and remove mushroom stems.
- Mince stems.
- Snip parsley and mince.
- Mince scallions and garlic.
- Brush flat sides of mushroom caps with a little oil; place them in a low buttered baking dish.
- Heat the olive oil in a skillet over medium heat. Add minced mushroom stems, parsley, scallions, salt, pepper and garlic; cook for about 2 minutes, stirring frequently.
- Remove from stove.
- Add enough bread crumbs to make a thick paste.
- Stuff the mushroom caps; sprinkle the tops with bread crumbs.
- Bake in a 350u0b0 oven for 15 minutes.
