Easy Oven Fried Fish
- 1 lb. fresh or frozen flounder fillets
- 1 slightly beaten egg white
- 3 Tbsp. frozen grapefruit or orange juice concentrate, thawed
- 1 Tbsp. Worcestershire sauce
- 1/2 c. crushed rich round crackers (about 12)
- 1/4 c. toasted wheat germ
- 1 Tbsp. butter or margarine, melted
- Thaw fish, if frozen.
- Separate fillets and pat dry with paper towel.
- Combine beaten egg white, grapefruit or orange juice concentrate and Worcestershire sauce.
- In another bowl, combine crushed crackers and wheat germ.
- Dip fish fillets into egg white mixture, then in the crumb mixture.
- Arrange fillets in a 13 x 9 x 2-inch baking dish, tucking under any thin edges so fish will be uniform in thickness and cook evenly.
- Drizzle the melted butter or margarine evenly over fish.
- Bake in a 500u0b0 oven for 8 to 10 minutes or until fish flakes easily when tested with fork.
- Makes 4 servings.
