Nanaimo Cookies

  1. Put 1/2 cup butter, sugar, unsweetened chocolate, and vanilla in top of double boiler until blended.
  2. Add egg and cook 5 minutes, stirring.
  3. Add crumbs, nuts and coconut.
  4. Press firmly into buttered 9x9x2- inch pan.
  5. Cool and chill 15 minutes.
  6. Cream 1/2 cup butter, beat in pudding mix and milk.
  7. Add confectionary sugar gradually and beat until smooth.
  8. Spread over first layer. Chill 15 minutes.
  9. Melt chocolate in 1 tablespoon butter over low heat. Spread over layer and chill till firm.
  10. Cut into 1 inch squares.
  11. Keep in refrigerator.
  12. May be frozen.
  13. Makes 81 pieces.
