Nanaimo Cookies
- 1 c. butter, divided
- 1/4 c. granulated sugar
- 1 sq. baking chocolate
- 1 tsp. vanilla
- 1 egg, beaten
- 2 c. confectionary sugar
- 4 sq. dark chocolate semi-sweet
- 2 c. fine graham cracker crumbs
- 1/2 c. chopped walnuts
- 1 c. coconut
- 2 Tbsp. instant vanilla pudding
- 3 Tbs. milk
- Put 1/2 cup butter, sugar, unsweetened chocolate, and vanilla in top of double boiler until blended.
- Add egg and cook 5 minutes, stirring.
- Add crumbs, nuts and coconut.
- Press firmly into buttered 9x9x2- inch pan.
- Cool and chill 15 minutes.
- Cream 1/2 cup butter, beat in pudding mix and milk.
- Add confectionary sugar gradually and beat until smooth.
- Spread over first layer. Chill 15 minutes.
- Melt chocolate in 1 tablespoon butter over low heat. Spread over layer and chill till firm.
- Cut into 1 inch squares.
- Keep in refrigerator.
- May be frozen.
- Makes 81 pieces.
