Mushrooms Newburg

  1. Wipe mushrooms with damp cloth; remove stems.
  2. Melt butter in pan; add mushrooms, celery, onion juice, and paprika.
  3. Cover; simmer until mushrooms are tender.
  4. Stir in flour.
  5. Add cream; cook for a moment more.
  6. Add orange juice, rind, and grape juice.
  7. Season to taste with salt, pepper, cayenne, and nutmeg.
  8. Serve in individual dishes, on toast, or in croustades.
  9. Makes 4 servings.
