Cilantro Potatoes
- 4 medium potatoes
- 1/4 c. sliced green onions
- 1/2 c. shredded Monterey Jack cheese
- 1/4 c. low-fat Ricotta cheese
- 1/2 c. fresh cilantro
- 1/4 c. fresh chopped parsley
- 1 clove minced garlic
- 1/4 tsp. salt
- 1/4 tsp. white ground pepper
- Wash and bake potatoes in oven at 400u0b0 for 45 minutes to 1 hour or until done.
- While potatoes are baking, combine the remainder of the ingredients and toss it lightly in a bowl.
- When potatoes are done, remove from the oven and let them cool to the touch.
- Cut the potatoes in half lengthwise and fluff with a fork.
- Top each potato with approximately 1/4 of the topping mixture.
- Return to oven or microwave just long enough to melt cheese.
- Serve immediately.
