Cilantro Potatoes

  1. Wash and bake potatoes in oven at 400u0b0 for 45 minutes to 1 hour or until done.
  2. While potatoes are baking, combine the remainder of the ingredients and toss it lightly in a bowl.
  3. When potatoes are done, remove from the oven and let them cool to the touch.
  4. Cut the potatoes in half lengthwise and fluff with a fork.
  5. Top each potato with approximately 1/4 of the topping mixture.
  6. Return to oven or microwave just long enough to melt cheese.
  7. Serve immediately.
