Sweet And Sour Sauerkraut Kielbasa Stew
- 28 ounces sauerkraut, drained
- 1 large onion, chopped
- 4 medium potatoes, cut into 1 1/2-inch cubes
- 1/2 cup diced carrot
- 1 1/2 cups chopped green bell peppers
- 2 minced garlic cloves
- 1 lb low-fat turkey kielbasa (can use ham instead) or 1 lb low-fat turkey kielbasa, cut into 1-inch slices (can use ham instead)
- 1 medium tart apple, diced
- 2 (8 ounce) cans crushed pineapple, undrained
- 1 1/2 - 2 cups chicken broth, depending how liquidy you like it
- 1/2 cup white wine
- 2 tablespoons brown sugar
- 1/2 teaspoon pepper
- 1 teaspoon caraway seed
- salt, if needed, to taste
- Place all ingredients into your slowcooker.
- Stir lightly.
- Place lid on and cook on low for 6-8 hours or high for about 3 1/2 hours or until your potatoes and carrots are tender.
- If using stovetop, just bring everything to a boil, reduce heat, cover and simmer for about 45 minutes or until veggies are tender.
