Quick Saucy Chicken Stir-Fry

  1. Heat 1 tablespoon oil in wok or large skillet over medium-high heat.
  2. Add vegetables and garlic; stir-fry 4 to 5 minutes or until crisp-tender.
  3. Remove vegetables from pan.
  4. Add remaining oil and chicken to pan; stir-fry 4 minutes or until tender.
  5. Stir in vegetables, Miracle Whip salad dressing, soy sauce and ginger; simmer 1 minute, stirring occasionally.
  6. Serve over rice.
  7. Makes 4 servings.
