Quick Saucy Chicken Stir-Fry
- 2 Tbsp. olive or vegetable oil
- 1 c. broccoli flowerets
- 1 c. cauliflowerets
- 3/4 c. (2-inch) julienne cut carrots
- 1/4 c. green onion slices
- 1 garlic clove, minced
- 3 chicken breast halves, skinned, boned, cut into 1-inch pieces
- 1/2 c. Miracle Whip salad dressing
- 1 Tbsp. soy sauce
- 1/2 tsp. ground ginger
- 2 c. hot cooked rice
- Heat 1 tablespoon oil in wok or large skillet over medium-high heat.
- Add vegetables and garlic; stir-fry 4 to 5 minutes or until crisp-tender.
- Remove vegetables from pan.
- Add remaining oil and chicken to pan; stir-fry 4 minutes or until tender.
- Stir in vegetables, Miracle Whip salad dressing, soy sauce and ginger; simmer 1 minute, stirring occasionally.
- Serve over rice.
- Makes 4 servings.
