Low Calorie Seafood Okra Gumbo
- 2 doz. shucked oysters in their liquor
- 2 c. cold water
- 1 Tbsp. reduced calorie margarine in all
- 2 c. chopped onions in all
- 1 1/4 oz. tasso (preferred) or lean ham, minced
- 1 1/2 c. chopped green bell peppers in all
- 1 c. chopped celery in all
- 1 bay leaf
- 1 Tbsp. plus 2 tsp. Cajun Magic Seafood Magic
- 10 oz. fresh okra, sliced
- 2 c. peeled, chopped tomatoes
- 1 tsp. minced garlic
- 1/8 tsp. ground thyme
- 5 c. Basic Seafood stock (made with shrimp shells or water)
- 1/2 tsp. salt
- 1 lb. shelled, deveined shrimp
- 1/2 lb. lump crabmeat
- 1/4 c. minced green onion tops
- 3 c. hot cooked rice (preferably converted)
- Combine oysters and cold water.
- Stir and refrigerate at least 1 hour.
- Strain and refrigerate oysters and oyster water until ready to use.
