Beef Casserole
- 1 lb. lean ground round
- 1/2 c. diced celery
- 1 Tbsp. instant minced onion
- 1 can (28 oz.) whole tomatoes and liquid
- 1/2 c. uncooked long grain rice
- 1 tsp. chili powder
- 1/4 tsp. pepper
- 1 can (4 oz.) mushroom pieces and liquid
- Place a plastic colander in a large glass mixing bowl. Crumble ground round into small pieces and cover with wax paper. Microwave on High for 5 minutes or until meat is no longer pink, stirring after 2 1/2 minutes.
- In a 3-quart casserole, combine ground beef, celery, onion, tomatoes, rice, chili powder, pepper and mushrooms.
- Microwave covered on High setting for 10 minutes, stirring halfway through cooking time.
- Stir well.
- Reduce power level to Medium (50% power), and microwave covered for 20 minutes or until rice is soft.
- Serves 4.
