Beef Casserole

  1. Place a plastic colander in a large glass mixing bowl. Crumble ground round into small pieces and cover with wax paper. Microwave on High for 5 minutes or until meat is no longer pink, stirring after 2 1/2 minutes.
  2. In a 3-quart casserole, combine ground beef, celery, onion, tomatoes, rice, chili powder, pepper and mushrooms.
  3. Microwave covered on High setting for 10 minutes, stirring halfway through cooking time.
  4. Stir well.
  5. Reduce power level to Medium (50% power), and microwave covered for 20 minutes or until rice is soft.
  6. Serves 4.
