Italian Tomato Sauce(Serves 6)
- 12 oz. tomato paste
- 1 (No. 2 1/2) can Italian style tomatoes
- 2 Tbsp. oil
- 1/4 c. finely chopped onion
- 1 small clove garlic, finely chopped
- 1/4 c. celery, finely chopped
- 1 1/2 tsp. salt
- 1 tsp. sugar
- 1/4 tsp. nutmeg
- 1/2 tsp. oregano
- 1/8 tsp. pepper
- 1/4 c. chopped fresh parsley
- 1/4 c. grated Parmesan cheese
- Fry onion, garlic and celery slowly in the oil about 5 minutes.
- Crush tomatoes.
- Add to paste and the onion, celery and garlic.
- Add all other ingredients and simmer in a heavy covered pan 1 hour.
- Then add the meat balls and simmer, covered, about 30 minutes longer.
- (Cooked mushrooms may be added last 15 minutes.) If sauce becomes too thick, add a little water.
