Strawberry Tiffany Torte
- 1 1/2 c. vanilla wafer crumbs
- 1/2 c. margarine, melted
- 1 3/4 c. milk
- 1 pkg. (8 oz.) cream cheese
- 1 pkg. (3 3/4 oz.) instant vanilla pudding
- 1 tsp. grated lemon rind
- 1 qt. fresh strawberries, sliced
- 1 (8 oz.) Cool Whip topping
- Combine wafer crumbs and margarine; reserve 1/2 cup of this mixture for topping.
- Press remaining crumb mixture onto the bottom of a greased 9 x 13-inch pan.
- To softened cream cheese gradually add 1/2 cup milk, mixing until well blended.
- Add pudding mix, remaining milk and lemon rind.
- Beat slowly, about 1 minute.
- Pour carefully over crust and then cover with sliced strawberries.
- Spread Cool Whip over the strawberries and top with remaining wafer crumbs.
- Chill several hours or overnight.
- Makes 12 to 15 servings.
